Berry Cobbler for Breakfast


Although I’m fighting a head cold right now, I was hungry and watching episodes on TV that were leading me down the path of eating dessert for breakfast. This one isn’t so bad as desserts-for-breakfasts go. I think this is another case where my junk food is really other people’s health food.

Quick Berry Cobbler (adapted from a recipe on

1 frozen banana (you could use a raw one, just make sure it’s ripe and adjust the cooking times)
1 cup frozen mixed berries (I used the Very Cherry Blend from Trader Joe’s)
1/4 cup old fashioned rolled oats
1/4 cup raisins
1/8 teaspoon vanilla
2 tablespoons ground raw almonds (I bought almond meal from Trader Joes)
2 tablespoons unsweetened coconut
1/4 teaspoon cinnamon

Mix everything in a microwave safe dish. Microwave for 2 minutes. Mash the thawed banana in with everything and stir it around until its incorporated, and microwave for another 1 minute. Serve warm.

As far as Saturday morning, comfort breakfast goes, this was awesome and really uncomplicated. I have been using a mashed banana in lieu of sugar in oatmeal for a while now, so this was just a yummy extension of this, with lots more berries.
